*Make sure to read our Beer 101 post to make sure you have the proper set up before beginning to brew
INGREDIENTS
*This recipe yields one gallon of beer
- Two-row pale malt | 907 grams
- Caramel malt | 77 grams
- Cascade hops | 30 grams
- California Ale yeast (AKA Chico Ale yeast) | 2 grams
- Ice | 10 lbs
- Priming Sugar | 3 tbsp

*Make sure to sanitize all equipment with StarSan Solution before beginning to brew
DIRECTIONS
Step 1
Heat up 2.5 quarts of water in a large 2 gallon pot (pot A) to 155 degrees and then pour the grains in. Once this is done, let it sit for 1 hour and stir every 15 minutes, maintaining the temperature at 155 degrees.
Step 2
After 1 hour at 155 degrees, turn it up 170 degrees for 5 minutes while stirring constantly.
Step 3
Once that is done, pour everything from pot A into a kitchen strainer, letting the liquid drain into another pot (pot B). In parallel, heat 4 quarts of water in a separate pot (pot C) to 170 degrees. Once this is done, hold the strainer over pot A and pour the liquid from pot B over the grains (straining into pot A). Next, pour the water from pot C over the grains (straining into pot A). Once this is done, you can throw away the grains.
Step 4
Bring the liquid to a boil, keeping the boil as low as possible. The total boil time will be 90 minutes and you will add hops throughout this process per the following schedule:
- Add the 2.83 grams Cascade hops once the boil starts
- Add 4.25 grams Cascade hops after 30 minutes
- Add 11.34 grams Cascade hops after another 30 minutes
- Add 11.34 grams Cascade hops after another 30 minutes (once the boil is done)
*Once the above is done, take the pot off the heat and immediately follow step 5 below
Step 5
In a sink (or bathtub or area that has the drain and space) fill it up with cold water and add at least 10 lbs of ice. Put the pot in the sink and monitor until it cools to 68 degrees.
Step 6
Next, syphon the liquid through the fine mesh strainer and into another pot.
Step 7
Once that is done, syphon the liquid into the fermenter jug, add the yeast, and shake well to agitate the yeast.
Step 8
Insert the cork with air lock on top of the fermenter and set aside in a cool, dark place for 2 weeks.
